this dish reminds of lasagne for the way it is constructed, but in the end it is just layers of grilled zucchini, scamorza cheese, parmigiano and plain tomato-basil sauce (repeat the layers two-three times and bake until the scamorza starts to melt, 20min). it is best served warm or cold which means it definitely works for the hot weather of these days!
