Soup Special #2: Cauliflower and Coconut Milk Soup

questa zuppa mi è piaciuta particolar mente, il latte di cocco ingentilisce il sapore forte del cavolfiore, le spezie danno personalità. grazie a FiorDiZucca (link alla ricetta in italiano e inglese). in effetti, tutto il blog di fiordizucca merita una visitina!

you can find the recipe both in english and italian at FiorDiZucca's blog. i posted the picture anyway, since i liked this soup a lot, particularly the combination of the strong taste of the cauliflower wisely refined by the coconut milk. spices add personality. and fiordizucca's blog is definitely worth a visit!

Soup Special #1: Pea Soup

the weather last week inspired me to prepare some comfort vegetarian soups. here's one, adapted from healthy 101Cookbooks blog:

Pea Soup

gently fry one small onion in olive oil. add one can of peas with their water and add another half glass of water. add salt, chili peppers (if you like the hot taste) and a spoon of lemon juice. let cook for 10 minutes. put half of the soup in a separate bowl, whirr and add it back to the rest. cook for another minute. add fresh pepper.

Zuppa di Piselli Superfacile

soffriggi una cipolla in un po' di olio. aggiungi una lattina di piselli ancora nella loro acqua e aggiungi mezzo bicchiere d'acqua, un pizzico di sale, un cucchiaio di succo di limone e del peperoncino. fai cuocere fino alla consistenza di zuppa che preferisci. metti da parte la metà dei piselli e frullali con un frullatore a immersione. rimettili in padella e cuoci per un altro minuto. servi con una grattuggiata di pepe fresco e un filo di olio d'oliva a crudo

Welcome back, cold! Almost-Indian Lentils Soup


these last days, the only thing i need is some warmth. and coziness. mh, and especially after the brownies blowout... we're in urgency of some serious healthier stuff here!
and actually i feel that my craving for sweet is weaker and weaker, so i guess i will be posting more about salted stuff in future. when i finish with blogging all the behind schedule cakes, of course!
so, yes, a lentils soup: it is supposed to be an indian-style recipe, but my indian flatmate (oh, yes, i have a very competent food critics team in my apartment, eheh) didn't find many similarities with hers. but at least she liked it :)

Almost-Indian Lentils Soup
(enough for two or three)

boil a can of lentils (250gr) with its water with a glass of plain tomato sauce, a chopped onion, 200ml of coconut milk, salt&pepper, fresh chili pepper (as much as you like) a little spoon of cumin and another little spoon of coriander. cook for 20 minutes, adding water if needed.
